Executive Chef – Frederick Stokoe

Executive Chef, Frederick Stokoe’s creativity and passion for food led him down the culinary path starting with the completion of his apprenticeship with Hilton International in London, England. Where he was classically trained and worked with some great European Chef’s. He then moved Dubai to satisfy his desire to travel and learn more about the culinary arts, where he worked for 13 years moving up to Executive Sous Chef in some of the finest hotels in the Middle East.

Frederick Stokoe came to Canada in 2001 and worked for the prestigious Movenpick Restaurant, in Toronto as Executive Chef. From there he worked in various positions including The Old Mill Inn, The Suites at 1 King West and the Sutton Place Hotel. His passion for learning more about food and various cooking styles took him out to Sea, where he worked as the Executive Chef aboard one of with Holland America’s Cruise Lines. He then returned to Canada and was appointed Executive Chef at Delta Toronto East. Where, his love and passion for food, and providing all guests with a positive dining experience can be experienced by all.

Restaurant Manager – Mitsuko Yamanda

From her hometown of Japan, Mitsuko made her first visit to Toronto 23 years ago and decided to call it home. With over 30 years of experience in the service industry, Mitsuko has mastered all facets of the restaurant management through world-class hotel establishments like the Tokyu Hotel in Fukuoka City of Japan. Her passion lies in providing the highest level of service that focuses on her love and knowledge of Japanese Food & Culture. Mitsuko’s ability to make you feel at home and her attention to detail will ensure you have a memorable dining experience.
